Leek and Potato Soup

It's that time of year again. The snow falls and we bundle up to trudge to and fro. Sometimes we think our noses will fall off in the chilliness of the wintry wind. It's nice to come home and thaw out with a bowl of hot soup.

One of my favorite soups is Leek and Potato Soup. It's easy and quick and sure to become one of your favorites.

What you will need:

1 Leek
2-3 Large Potatoes
2 cups of Chicken broth
1-3 cups of water
1/2 cup of cheese (Parmesan, Asiago, Fontina and or Provolone)(Optional)
1/2 cup of milk or cream
Salt and pepper to taste

Clean the leek really well. Cut in to thirds and then into strips. Peel and cube the potatoes. Combine potatoes, leek, and chicken broth in medium sauce pan. Add 1-3 cups of water (just add enough to cover the potatoes.)Salt and pepper. Bring to a boil and cover loosely. Let boil until potatoes are tender, stirring occasionally.



Once potatoes and leeks are tender, remove from heat. Mash the potatoes and leeks. Add the cheese and any additional pepper and salt. Add milk or cream.

Stir well. Bowl up and enjoy!
